A simple and delicious recipe – Sesame Oil Chicken Rice.

Today I would like to share with you all a really simple yet fulfilling recipe. Idea for students like us who usually do not have much time to spend in the kitchen yet still craving for something better than a bowl of average instant noodle.

It is the Sesame Oil Chicken Rice!

 

Okay, let’s move on to the ingredients already:

You’ll need:

  • One debone chicken drumstick (that’s a video tutorial below)
  • One cup of white rice
  • One and a half spoon of sesame oil
  • One and a half spoon of Shaw Xin Hua Diao Jiu (绍兴花雕酒) #
    (# For those who practice alcohol-free diet, you can replace this with Maggi concentrated chicken stock. )
  • Some sliced ginger (as much as you like)
  • A small pinch of salt for flavoring

Steps:

  1. Wash the white rice thoroughly, drain it and put aside.
  2. Slice the gingers and the drumstick meat into pieces.

  1. Heat the wok, add in sesame oil and gently fry the sliced ginger to golden brown. *
    (* careful with the heat, as too hot of a temperature will turn the sesame oil bitter.)
  2. When the sliced ginger is ready, add in the drumstick meat and fry it until its skin turns slightly brown.
  3. Add in the salt and Shaw Xin Hua Diao Jiu/concentrated chicken stock and cook until the sauce slightly concentrate.
  4. Then, add in the rice and mix it thoroughly with the chicken and ginger.
  5. Finally, move all the ingredients to your rice cooker pot, add in water, and cook it as how you’ll usually prepare your rice.
  6. Serve it hot.

Pro Tips:

If you want to have a chewy version of chicken rice, try replace the white rice with glutinous rice (nasi pulut) instead!

Pay attention to the amount of rice and water you add-in, as glutinous rice does not expand nor absorb much water during cooking, more rice is needed to make a bowl of chicken rice. While the water needed is only 0.6 – 0.8 times of the rice or just enough to cover the rice.

Ya, a pretty lame title to start off my first blog post on my new blog (ya, I have an old blog). But considering this, it is Thursday 8:20 p.m. here at Kuala Terengganu, where I’m now in my sediment-stained lab coat, sitting in front of the lab computer (free hi-speed internet, yay!), writing my first blog post, this is the title you get… haha… jk…
